  • 1/4 cup Unsweetened cocoa powder
  • 1/4 cup Maple syrup or honey (adjust based on preferred sweetness)

Instructions

  1. Step 1: Combine Ingredients
    Place the cottage cheese, cocoa powder, and your choice of liquid sweetener (maple syrup or honey) into the jar of a high-speed blender or a food processor. Make sure to scrape the sides so all the cocoa powder gets incorporated.
  2. Step 2: Blend Until Smooth
    Blend the mixture on high speed for about 1 to 2 minutes. It is important to blend until all the “curds” from the cottage cheese have completely disappeared. You want the texture to be perfectly glossy and smooth like a traditional pudding.
  3. Step 3: Portion and Chill
    Transfer the mousse into small bowls or ramekins. While you can eat it immediately, the texture improves significantly if you let it chill in the refrigerator for at least 30 minutes. This allows the mousse to set and the flavors to meld together.
